The works they build
It appears that the skill in building was innate, at least in the children of Pyrsogianni who were 9-10 years old: without anyone ever teaching them anything, they built shacks and iconostases. The masons also worked at an old age, even when they were 80. The speed of construction was an indicator of skill, when combined with the proper construction. A pair of masons could build 10 square pixis (approximately 5.6 sq.m.) a day, namely in about 10 hours of work.
